It has been a long time since I last wrote anything here in my blog. Well here I am again and hello again. I finished my college just recently and it is about time I got to start cooking for my own since I can not rely on my mother’s cooking if I am living own my own somewhere far. Then it struck to me that if make a blog post on the recipes to cook I can later on refer here, my own cookbook. This post will be divided into sections such as rice, flour, curry and so on.

X - any portion size (X glass)
tsp - teaspoon
Tsp - tablespoon
When adding anything - Low heat
When cooking - High heat
Add-on with oil cooking (thalippu):
- Soombu & kaskas
- Jeera & Pepper

Rice

General rice recipe:

- X cups of rice in cooker
- Wash rice
- X * (water ratio) of cooking/clean water
- close cooker (remember rubber outlet and weight)
- start stove and cook until no more water is rising from the top/whistle
- wait of pressure to subside (important else the cooker is a bomb)
- open cooker

Rice water ratio:

1 (Normal) Maharaja rice - 2.25 water
1 Basmati rice - 2.5 water
1 Jera rice - 2.5 water

reduce water if needed (like cooking with tomato in same pan)

Pulao

Ingredients

Spices:
Ellachi - Cardamon
Patta - Cinnamon stick
Carmbu - Clove
Kalpasu - Litmus flower (idk)
Briyani/Bay leaf
Sombu
Kaskas - Poppy seed

2 Onions
4 Tomatoes
1 Green Chilli
2 whole garlic & ginger: Ginger-Garlic paste
Mint Leaves
Vegetables:
    - Carrot
    - Beans
    - Cauliflower
    - Peas
Add-ons:
    - Panners
    - Soya: Meal Maker

Powder:
Chilli 
Corriander
Kashmiri Chilli
Turmeric
Salt

Extra:
Lemon (half)
Curd

Basmasti Rice

Algo

- Cooker on stove with oil on low heat
- Add spices
- Onion and cook
- Ginger-Garlic paste
- Tomato

- 2Tsp Chilli Powder (or to liking)
- 1tsp Kashmiri Chilli Powder
- 2Tsp Corriander Powder
- Pinch Turmeric
- Green Chilli
- Salt
- Mix on high

- 2 spoon curd
- Addin all vegs or addons
- Mix on high (2 mins)
- 2 cups Basmasti rice + 2.5 cups water
- Check salt and add if any
- Lemon juice
- Close cooker and cook
- One whistle (or till no water out)
- Finish

Chicken/Mutton Biriyani

Ingredients

Meat: (0.5 kg)
- Chicken
- Mutton

Spices:
Ellachi - Cardamon x3-4
Patta - Cinnamon stick x3-4
Carmbu - Clove x3-4
Kalpasu - Litmus flower (idk)
Briyani/Bay leaf x2
Star Anise x1

Spices 2:
Soombu
Poppy Seed
Bay/Biriyani Leaf x2

Base:
1pc Ginger
2 Garlic
1 Green Chilli
Mint Leaf
Corriander Leaf

2/3 Onion
4/5 Tomato
Mint Leaf (few)
+1 green chilli

Powders:
1Tsp Chilli
2Tsp Corriander
2Tsp Biriyani Masala
half-tsp turmeric
Salt

Extra:
Curd
Lemon

Algo

- Add base and spices in mixer with water to make base paste

- Cooker on stove with oil
- Put in spices_2 and cook
- Later put cut onion with another green chilli and fry
- Add base paste
- Cook
- Add tomato

- Add powders
- Add Chicken/Mutton (half kg)
- Salt for taste
- 1 Lemon juice

- Cook open cooker with meat for 3-4 mins
- Check water (add little bit if very needed)
- Salt for taste
- Close cooker for one whistle

- 3 cup Basmati Rice (wash rice)
- 3.5-4 cup water (check water)
- Salt for taste (a bit more since meat to cook)
- One whistle

- Finish
